Roasted Chicken

Today I also roasted a chicken: also a big success! I am going to use this method to roast a turkey for Thanksgiving.

Preparation (24 hr)

1. Prepare marinate sauce. Mix:
Cha1 Shao1 sauce (small )half bottle
Soy sauce
Sugar
Vinegar (a little)
Cooking wine
Chopped onion (small one)
Chopped garlic
Chopped ginger root

2. Use a big zip bag. Put chicken and sauce in. Put the bag in fridge and flip it when you remember. Let it marinate for 24hr - 48hr. For turkey I think at least 3 days.

Roast (2hr)

1. Get the chicken out of the bag. Let it sit on rack and dry for 30 min.
2. Oven set to 325F - 350F.
3. Roast on the rack for 1hr15min - 1hr30min. My chicken is around 3 pound.
4. Raise the temperature to 400F. Roast for 15min. ALWAYS CHECK and DO NOT BURN YOUR CHICKEN!
5. Get it out of the oven and let it sit for 10-15min.

This roasted chicken turns out to be very juicy with crisp skin. Much much better than store bought roasted chicken!
