上周末外面大雪纷飞,断了所有出门的念头,就再家里烤了两炉蛋挞。喝着热咖啡,穿着棉睡衣,热热的蛋挞,加上外面的雪景,感觉很不错呢。我把分量加倍了,做了两个dozen的蛋挞,因为有个朋友要冒着风雪来吃蛋挞。:)

Recipe是从爱厨那里抄的:
A. 油皮:bread flour 45g, cake flour 45g (我是加大了这两个面粉的量,因为油皮大一点比较好弄), shortening 33g, powdered sugar 20g, water 40cc.
B. 油酥:cake flour 130g, shortening 50g (可以多放点,如果和不起来的话)
C. 蛋挞水: evaperated milk 180g, water 180g, sugar 150g (已经减量了,可以再少一点), egg 210g (3 eggs), egg yolk 40g (2 eggs)

1. Heat evaperated milk + water till boiling. Add sugar. Leave the heat add mixed eggs and egg yolks.
2. Mix A. Relax for 10min.
3. Mix B.
4. 350F, 20-25min.

Make 12 egg tarts.
