两个很棒的recipe: lemon pudding cake and african peanut soup

天热了,从costco买了一大袋lemon来用糖腌着,用了两个多余的柠檬做了这个lemon pudding cake:

Lemon Pudding Cake

INGREDIENTS
- 4 eggs, separated
- 1/3 cup lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon butter
- 1 1/2 cups white sugar
- 1/2 cup sifted all-purpose flour (我用了cake flour)
- 1/2 teaspoon salt
- 1 1/2 cups milk

DIRECTIONS
1。Beat together egg yolks, lemon juice, lemon rind, and butter or margarine until thick and lemon colored. Combine sugar, flour, and salt; add alternately with milk to the yolk mixture, beating well after each addition.
2。Beat egg whites until stiff. Blend egg whites into batter on low speed of electric mixer. Pour into 8 inch square baking dish.
3。Place a pan of hot water in the oven, and set the baking dish into the pan. Bake at 350 degrees F (175 degrees C) for 45 minutes.

很light的蛋糕体+pudding 层,清香的柠檬味,夏天甜品的好选择。 如果能在做好以后,放冰箱一阵子,估计更好。

我是很爱喝汤的人,现在正在探索各种蔬菜汤的做法。这个汤有点特别,很hearty,适合冬天喝。

West African Peanut Soup (这个是10人份的, 我做了一半的量)

INGREDIENTS
2 tablespoons olive oil
2 medium onions, very finely diced
2 large bell peppers, (any color) finely chopped
6 large cloves garlic, minced
1 (28 ounce) can chopped tomatoes with juice
8 cups vegetable broth
1/4 teaspoon pepper
1/4 teaspoon red pepper flakes
1/2 cup uncooked rice
1 (18 ounce) jar creamy peanut butter (可以少加一点)
chopped roasted peanuts (optional)

DIRECTIONS
- Heat olive oil in a large stock pot over medium-high heat. Cook onion, bell pepper, and garlic until lightly browned, about 5 minutes. Stir in tomatoes with their juice, vegetable broth, pepper, and red pepper flakes. Simmer, uncovered, for 15 minutes.
- Add rice to soup and stir. Reduce heat, cover, and simmer 25 minutes, or until rice is tender.
When rice is cooked, whisk in peanut butter and return to a simmer, and serve. Garnish with chopped roasted peanuts, if desired.
